Healthier Version for Rice Krispie Treats

Rice Krispie treats are always a winner at any kiddies' party, or a special treat now and then. Try this healthier version for a snack that can be enjoyed more often!

Ingredients Rice Krispie

4 cups Puffed brown rice cereal (available in health section of most supermarkets or Health shops)
1 cup Honey
1 teaspoon Vanilla essence
1 teaspoon Cinnamon, ground
1 cup (250 ml) Peanut butter, sugar-free

Method to prepare Rice Krispie treats

1. In a large bowl, mix together the peanut butter, honey, vanilla, and ground cinnamon.
2. Stir in the cereal and mix until it is evenly incorporated.
3. With slightly wet hands, form the mixture into small balls. Refrigerate until ready to serve.

Recipe yields 40 small balls
1 ball = 1 carbohydrate exchange + 1 fat exchange
